Leopard Mail loyalists/experienced users!

Just bought a new MacBook (2.4Ghz) while in the US. Trying to use Mail instead of Entourage since see some limitations there... anyway, having used MS Outlook for a long long time, I find a few things missing from Mail that perhaps someone out there knows answers to:

1- Any way of creating HTML mails in Mail, instead of just Rich Text?
2- When I send out Rich Text emails to PC users, they see a different font on their systems!
3- Apparently, there's no way of subscribing or unsubscribing to IMAP folders in Mail - seemingly you get all by default?
4- Lastly, when replying to someone's emails, if one wishes to make a comment in the body of the original message, there's no way of marking out one's reply except by manually changing the colour of that text.

Nope. RTF and Plain Text are your options on this one.

This would also happen with HTML, depending on the font used and the recipients client.

Yepp, there is no function in Mail for picking folders to subscribe to, like there is in some other email clients. I think you can do it in Thunderbird, which of course is available for Mac OS X.
