If you're fed up with some sites not working in Safari (like Google Documents), and if you want to live on the bleeding edge of web browser development, check out WebKit.

WebKit is what lies at the heart of Safari, and each night there's a new version (build) that you can download and run.

If you really, absolutely, positively need to have the latest Webkit (or Camino, or Firefox Mac), a friend of mine created/maintains a utility called "Thirdphase"

This is not for the faint of heart (but only the strong run nightlies anyways..)
