Arabic eMails

Ever since I upgraded to Leopard, most of my emails require me to change the encoding before they are sent.

Has anybody else ran into this?
Does anyone know of a work around for this?
At least to force Mail to send in a default encoding (Unicode seems to work fine)

I have it on Automatic, it works fine with me on 95% of times.

I used to be fine in Tiger.
But now, I have to set the encoding for almost every outgoing Arabic message (even if I didn't write it)!!
Its very frustrating.
